Pronounced gwaan-CHAA-lei, Guanciale is a rich and delicious fatty piece of pork taken from the cheek or jowl. We prepare and cure our Guanciale at our Joo Chiat Singapore Deli for 30-40 days until it is perfectly matured.
Guanciale is a perfect addition to your charcuterie boards, wrapped around vegetables, chopped up and tossed with pasta, and served in sandwiches. It's also sometimes strewn over wood-fired pizzas for a salty, meaty bite. Two common Italian pasta dishes which feature Guanciale are Spaghetti Alla Carbonara and Amatriciana. The Guanciale meat adds umami richness to the sauce as well as some saltiness and velvety backbone.
